My notebook has SATA. In theory, could I just hook my 360 dvd drive up to the location of my normal dvd drive and then flash (given that I don't need a 3rd-party device or anything else)?

Laptops are not recommended, it must be a compatible chipset for the SATA port.
If you want to use a Laptop, then you need a USB to SATA device for the XB360 HDD, or your SATA port must be from a compatible chipset.

I have heard of people in xbox-scene using laptops. I remember seeing a posting on craigslist of some guy who has a mobile flashing service. I asked him if he uses a laptop and he does.
Just check your chipset.
